How will it affect my gingerbread if I don't adjust for high altitude?

I'm making gingerbread from a mix. It says to add 2 Tbl. flour for high altitude. (I am at 5200 ft.) I was wondering how it would affect the bread if I don't make the adjustment.

I would prefer a gingerbread that is more dense and less cake-like than I usually get from a mix. Might I get that result if I bake it without the added flour?

    Maybe. Its worth a try. You could also try decreasing baking powder, if adding that is part of the instructions.

    Why don't you test it out before you make an entire batch. Roll out dough for one cookie and bake that first and taste it to see if it has the effect you want. If not, you can always add the extra flour at that point.
