This is terrible but I'm laughing really hard,

Vegetables are people who are brain dead, essentially. So in saying the hardest part of a vegetable to eat is the wheelchair, you are being assumed a cannibal and cannot eat the wheelchair of the "vegetable" (person).

But, you're not a cannibal. :) this is why you did not understand the joke.

A brain dead person who can't really do anything is sometimes referred to as a vegetable or in a vegetative state. If they aren't in a bed they can be pushed around in a wheelchair (hence the joke).

It's a sick joke but to be honest I laughed the first time I read it.

It's a very mean joke. A vegetable can also be defined as a person unable to move. Like you might see in movies or on T.V. They cannot move, so someone must push them around, thus requiring a wheelchair. It's not really talking about like a carrot or something.
