It actually goes back to the military in WWII, when trucks were classified by their load capacity... Jeeps were 1/4 ton utility vehicles, and cargo trucks were rated for 1 ton, 2 1/2 ton, 5 ton, etc.

After the war, when civilian pickup trucks were coming into more common use, the capacity designation carried over, and the standard pickup became the 1/2 ton, the slightly heavier truck was a 3/4 ton, and the truck with the dual rear wheels was the 1-ton.

Modern pickup trucks can haul well beyond their nominal 1/2-ton or 1-ton load capacities, but the old school designation lingers on to make comparisons between different versions of the same manufacturer's vehicles.
