Recipes and techniques for cinnamon tortilla's, cinnamon tortilla bowls, and fruity salsas and/or deserts?
I need some ideas for some upcoming events. (New Years, Football parties and Superbowl parties)
First:
I want to make baked (not fried) Cinnamon tortilla chips, and put them in an edible baked cinnamon tortilla bowl

I haven't made these before so I need to know how much sugar/cinnamon to use and do I also use butter, cooking spray? or oil?
Do I coat both sides of the tortilla?
Second:
For the chips, I imagine I am supposed to use flour tortillas for the bowls and chips? Or would whole wheat be better?
I can use an oven companion product (http://media.lakeside.com/images/product/10704_110... to expand the "shelves" in the oven, so it doesn't take forever to make tons of chips, but I need to know how long to bake and, again, sugar/cinnamon ratios and do I coat both sides, use of oils, and do I flip them over?
Third:
I need recipes for the salsas that I could make
Like strawberry salsa? or apple? Or Mango? Any ideas or recipes for that would be good with the cinnamon chips?
Fourth:
Will the mini-cinnamon tortilla bowls hold up if I serve the salsas in them? How to make them strongest to hold up?
And finally/Fifth:
Any desert ideas to put in the mini cinnamon tortilla bowls.
I am thinking of something similar to Cracker barrels "Fried Apples" with Vanilla Bean Ice Cream and caramel Sauce.
All Ideas would be helpful (especially if you've tried these before) and you don't have to answer all 5 parts of the Q to be considered as "Best Answer"
I will leave this question open for an extended period and I will choose a BA.

The directions for the pans say:
"They're simple to use; simply lay a tortilla over the pan, press it into the curves and bake for 8 to 10 minutes. After a 5-minute cool-down period, the crisp shell is ready to stuff with lettuce, meat, beans and more. You can also use the bakers for molded salads and desserts, or for baking brioche and other breads. Set of 2 Large, 8-1/2" dia. x 2-3/4", each. Set of 4 Mini, 6-1/2" dia. x 2-1/2", each. Made of steel with a nonstick coating on the interior."
Not sure if I put the Tortilla on the outside of the pan and bake upside down? Or inside the pan, with the interior being non-stick? How long and at what temp?

Directions
Preheat oven to 350 degrees F. Spray each bowl lightly with non-stick cooking spray. Microwave each tortilla (I do one at a time) for 8-10 seconds ~ this makes them easier to place in the bowls without tearing. Next, *lightly brush both sides of each tortilla with melted butter and generously sprinkle with cinnamon sugar. Place each tortilla in a bowl, gently filling the bowl and folding them where needed. Press the center of each tortilla to make a flat bottom. Place bowls in preheated oven on middle rack. Bake for 15 minutes or until they are crisp and golden brown. Once ready, remove from oven, let stand for 2-3 minutes and remove them from the bowls. Place the tortilla bowls on wax paper to finish cooling.
*Tips* Be sure to lightly brush with butter ~ too much will make them soggy and they won't crisp up. During the baking process, check the tortillas to see if there are big bubbles filling the center of the bowls. If you have any, just pop them with a toothpick and continue baking.

Freestyle Fruit Tart
What You Need
1 ready-to-use refrigerated pie crust (1/2 of 14.1-oz. pkg.)
4oz. (1/2 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened
3 plums (3/4 lb.), sliced
1/4cup granulated sugar
2Tbsp. flour
1tsp. cinnamon sugar (3/4 tsp. granulated sugar and 1/4 tsp. cinnamon)
1cup thawed COOL WHIP Whipped Topping
Make It
HEAT oven to 450ºF.
LINE 10-inch pie plate with pie crust. Carefully spread cream cheese into 6-inch circle on center of crust.
TOSS plums with granulated sugar and flour; place over cream cheese. Gently fold edge of crust about 2 inches over plums, leaving center uncovered; sprinkle with cinnamon sugar.
BAKE 25 min. or until crust is golden brown and fruit juices are bubbly. Cool slightly before removing tart from pie plate. Serve topped with COOL WHIP.

the only time i have made tortilla bowls i placed the dough on the outside of the upside down pan, that is also how i make bread bowls. i lightly grease the bowl with oil, press the dough gently into it.sorry i cant help with your other questions. have fun with it and happy holidays.

Summer fruit salsa...with strawberries, kiwi and pineapple along with diced tomatoes, tomato paste, onions, jalapeno peppers and red bell peppers. salt, sugar and vinegar.
My favorite chip dip is straight Pace Picante and I don't care much for cilantro
leaves.
