This is, a British recipe - turn the oven on, fan 170 C - Weith the eggs first, then all your materials are the identical weight, i take advantage of this for all my sponge muffins. Recipe the burden of three Eggs in Sugar, Butter and Self elevating Flour, take out two tablespoons of the SR flour and exchange with Cocoa mix the flour and cocoa together as first-class you can as you wouldn't have a sieve. Cream the butter and sugar together until gentle and fluffy, then beat the eggs in step by step, fold the flour and cocoa in cautiously after which put into the paper cases, fill them three quarters full and put in the oven for about 20 mins depending on your oven. They're cooked once they sping again when pressed. When cool that you may ice them with chocolate buttercream or go and purchase some contemporary cream within the morning, whip it and beautify with the cream and a few chocolate buttons. Hope your mum enjoys them.
