How can I make a vegan gluten-free brownie recipe...?

a. awesome

b. more cookie-like so I can make it shapes and frost it easier

c. if you have a really good recipe you could share, I only have one and I'm not sure how it'll turn out

I have to make it for lots of non vegans too so any input on how to make them as close to regular brownies as possible would be appreciated!

    GLUTEN-FREE BROWNIE COOKIES

    Makes 2.5 dozen cookies

    Ingredients:

    2 cups chopped pecans

    1/2 cup butter

    4 oz unsweetened chocolate, chopped

    3 cups semisweet chocolate morsels, divided

    1-1/2 cups gluten-free all-purpose flour

    1/2 tsp xanthan gum

    1/2 tsp baking powder

    1/2 tsp salt

    1 tsp espresso powder

    4 large eggs

    1-1/2 cups sugar

    2 tsp vanilla extract

    Directions:

    Preheat oven to 350 degrees. Spread the nuts onto a baking sheet and place in preheated oven 5-7 minutes until fragrant. Shake the baking sheet halfway through baking so the nuts will toast evenly. Remove nuts from oven and set aside to cool completely. Once cool, chop nuts and set aside.

    In a large heavy bottomed saucepan, melt butter, unsweetened chocolate, and 1 1/2 cups chocolate morsels over low heat, stirring constantly; set aside.

    In a medium bowl, combine flour, xanthan gum, baking powder, salt and espresso powder; set aside.

    In the bowl of a stand mixer fitted with the paddle attachment, beat eggs, sugar, and vanilla at medium speed until combined. Add flour mixture, beating well. Add chocolate mixture and beat until combined. Stir in remaining 1 1/2 cups chocolate morsels and pecans.

    Drop dough by 2 tablespoonfuls, spacing about 2 inches apart on to parchment paper lined baking sheets. Bake the cookies, one sheet at a time, until edges are firm and centers appear cracked, 9-10 minutes, rotating the baking sheet halfway through baking. Cool the cookies on the baking sheets about 3 minutes; using a wide metal spatula, transfer the cookies to a wire rack and cool to room temperature.

    Here are the ingredients:

    ½ can pitted salt cured green olives

    2/3 C. water

    3 C date sugar

    1 ½ t. slippery elm bark powder

    ½ c almond milk

    ½ vanilla bean

    1 1/3 c freshly ground wheat or barley flour

    6 T. carob powder

    The best place that I know of to buy date sugar is www.shieldsdates.com---at least for people in the US. Save $25 dollars on a Vita Mix if you live in the US or Canada with this free shipping code from Vita Mix: 06-004925 at www.vitamix.com.

    The slippery elm bark powder can be found in a health food store. It is a replacement for eggs in baking.

  • Here's a great recipe for vegan, gluten free brownies, and it's good for making more "cookie-like" for sure (see why in the last paragraph, below). Non vegans will love it, too, as the dates are a great addition for taste and consistency!

    From Katzinger's "Gluten Free and Vegan Holidays:"

    8 pitted dried dates

    ½ cup olive oil

    ½ cup dark brown sugar

    1 teaspoon vanilla extract

    ½ teaspoon salt

    ½ teaspoon baking soda

    ¾ cup cocoa powder

    ½ cup almond meal

    ½ cup sorghum flour

    ½ cup coconut flour

    2¾ ounces dark chocolate (72% cacao), finely chopped

    1. Begin by simmering the dates in 1 cup water for about 1 hour to soften. This can be done the day before.

    2. Preheat the oven to 350 degrees F and grease an 8-inch square baking pan.

    3. In a large mixing bowl, combine the olive oil, brown sugar, vanilla, salt, and softened dates with any remaining soaking liquid. In a separate bowl, combine the baking soda, cocoa powder, almond meal, and flours. Gradually incorporate the dry ingredients into the wet ingredients and stir until well combined. Fold in the chocolate. Pour the batter into the pan and bake for 25 minutes, or until slightly cracking on top. Cut the brownies into 12 squares after cooling."

    You may have to add more liquid (water, or oil) to your mix, but you'll be able to tell this quite easily as you're making it. This will ensure you'll be able to make it more cookie-like, as you'll be in good control of the moisture content of your mix!
