How long does almond milk last?

So I'm lactose intolerant, and there are these truffles I want to make that actually use almond milk. My problem is that I hardly ever use almond milk, so the stuff we have has a use by date of November 12. It's never been opened though. Safe to use?

    Depends on the packaging. Is it in a Tetra Pak (rectangular, like broth comes in) and stored at room temperature?

    Or is it in a traditional tall square milk carton like the kind cow's milk commonly comes in? That makes a difference.

    The kind in the Tetra Pak will likely last for years without spoilage, as long as it hasn't been opened. Once opened, use it within a week, like anything else.

    The kind in the regular carton may have gone sour, but is also quite possibly fine. It isn't meant to last as long as the Tetra, but it does last for months refrigerated and unopened. It might be okay, but it might not. Shake it, open it, sniff it, pour a glass, sniff again, and taste a tiny sip. If it smells or tastes weird, sour, separated, or effervescent, dump it. If it looks, tastes, and smells fine, it probably is. But again, use it within a week of opening because once you open it it reacts with the air and will go bad.

    It does not go sour, I buy the 2 liter ones here in Toronto Canada and a few of the Blue Diamond Almond Breeze in the tetra-paks they last 1 yr, if it has been refrigerated and not opened you can still use it, it will need to be shaken, as it has separated, I shake mine every day before pouring, I use the Silk Unsweetened one with a touch of vanilla.

    61-63% of frozen foods contain lactate solulate in them. this prevents the product from going bad. milk goes bad w/in hours after expiration date B/c #1) there's milk cultures & enzymes which cause bacteria to from

    #2) it curdles, thus causing a yellowish tint to the product.

    almond, soy, coconut, oat, walnut, pistachio, & acorn milk can last up to a week past expiration date.
