Cook a creamy mushroom and green pepper sauce

Fry off an onion and some sliced mushrooms add some of those pickled green peppercorns (a couple of teaspoons) and season well, add a big splash of double cream and cook for a couple of minutes and serve with your steak and chips.

Or maybe do a guacamole and some salad, all guacamole is is a bashed up avocado with finely chopped tomato onion and green chilli, seasoned with salt and pepper, mix in lime juice and chopped coridander if you like that, top it with a little splash of olive oil and it looks like something you would get form the deli.

Here is a Chefee trick with the chips. Select two or thee spuds about the same size and peel.

Cut the ends off first and then cut them 12 mm x 12mm (1/2") and select all of the perfect ones, the rest can go into a pot for mashing.

Rinse the chips under cold water and leave them in a bowl of water and chill for 30 minutes.

Drain well and cook them as normal.

When you plate them up stack them up like several # shaped stacks

If you want sweet, serve a sweet BBQ sauce over the steak. Here is one a recipe for sweet and spicy BBQ Sauce.

    Devil’s Steak Sauce

This is a unique sauce that really brings out the unique taste of different cuts of meat. I generally use it with lesser steak cuts like hangar or flank steak. Mix all the ingredients into a saucepan and boil over a high heat. Let the sauce simmer over a low heat for ten minutes before serving. Can be prepared ahead of time and reheated.

    · 2 Tablespoon Raspberry Jam

    · 2 Tablespoons Brown sugar, or 4 tablespoons maple syrup

    · 2 Tablespoon Worcestershire Sauce

    · 2 Tablespoon Tomato Sauce or Paste for a thicker sauce

    · 2 Tablespoon Balsamic Vinegar

    · 5 drops of hot Pepper Sauce or to taste

    · Salt and Pepper to taste

Personally I don't care for a sweet sauce over my steak because it can overpower the flavor of a good steak. So I prefer to serve caramelized onions and mushroom over my steak. Slice two onions and caramelize the sliced onions with a clove or two of sliced garlic. Garlic is optional. That simply means heat some butter with a little oil or you can just use oil and slowly saute the onions over low heat until they take on the color of caramel. Season with a little and pepper. They will still be soft but will also be sweet. It will take about 30 minutes to caramelize the onions. Serve the onions over the steak. You can also saute some sliced mushrooms in a little butter, add a little marsala wine, sherry or madeira if you have it. Combine with the caramelized onions mushrooms and serve over the steak. You can prepare the onions and mushrooms about 2 hours ahead of time and then reheat them to go over the steak. If you'd like onions more sweet, add some about a tablespoon of balsamic vinegar a few minutes before they are done.

For me, I love steak with chips but if you'd like the chips to be a bit healthier, prepare oven baked fries. These potatoes are savory rather than sweet. Preheat your oven to 200C or 400F. Just rinse the potatoes under cold water, rubbing with paper towels to dry. Then cut each potato into 6 to 8 wedges, depending on the size. I do not peel them, but you can. Toss the potatoes with a tablespoon of so of olive oil or other oil, a little salt, pepper. paprika and a few tablespoon of grated parmigiana cheese. Place the potato wedges on a baking pan and bake in the preheated oven 20-30 minutes. The potatoes will be crisp on the outside and tender on the inside, but not as crisp as chip. You can also use grated cheddar cheese, but add the cheddar once the potatoes are cooked through, then continue baking for about 3-5 minutes or until the cheese melts..
