Wolf's Rain is a lot like those and has the same writer and director as bebop. It's a post-apocalyptic anime and is pretty hard to explain.

Ergo Proxy is similar, also post apocolyptic, but much more like ghost in shell than wolfs rain (though both are closer to GIS than bebop). The writer did scripts for both bobop and GIS.

Samurai Champloo is really like bebop character wise though the main girl is somewhat useless. Champloo is probably the anime most like bebop in characters and themes minus the setting. The director of bebop writes and directs champloo.
