There are a number of ways for the owner of a site to can track traffic, the host might provide a stats log, one can add Google analytic providing more data than most mortals require or one can use the easy to install free statcounter.com for a fair amount of user data. One can also just stick on a primitive odometer page load counter script.
Someone checking out the competitors sites can only guess, perhaps using traffic figures from services that sample a tiny percentage of web users including compete.com, alexa.com quantcast.com.
