There are some anime that the background music is wonderful, and distinctive and noticeable enough that hearing it outside the show immediately brings flashbacks to the anime itself.

Like Fruits Basket, Hikaru No Go, Fantastic Children and .Hack//SIGN.

Fate/Stay Night has a great soundtrack, both the TV show and Unlimited Blade Works.

Rozen Maiden also has good music, it's sort of classical-influenced stuff that helps with the show's gothic atmosphere.

Higurashi no Naku Koro ni and Spice and Wolf both have some fairly unique soundtracks, although of course Higurashi's is usually more creepy than anything else.

Clannad, of course, has that dreamy Key-style music that is instantly recognizable.
