You got a lot going there for you and if you have all that time on your hands I suppose you can go right ahead but its not compulsory. You can read anything and as long as you like, but keep your concentration span in check otherwise its just exercise you doing.

you could pray 2 rakkat before maghrib...............prophet muhammad peace be upon him prayed sometimes like this.

and he USED to pray 2 rakkat AFTER maghrib.

so it willbe 2 before...3 maghrib.....2 after

there is no specific surah....you could recite any surah you want.

now if you really want to follow prophet muhammad in his way of prayer, then do this and you will get a house in heaven

2 rakkat before fajir

4 before dhuhir......2 after it

2 after maghrib

2 after isha

and sunah like this

2 before fajr .......

2&2 before duhr 2 after

2&2 before asr ........

2 after maghreb azan 2 after magreb

2 before isha'a 2 after

and read fatiha and any thing from holly quran after fatiha
