What is the conversion of unsweetened chocolate squares to powdered cocoa?
I making a chocolate whiskey cake and only have powdered cocoa and wanted to use it up before I bought new. This recipe is from Stonehenge Restaurant in Ridgefield, Connecticut. And sounds really good.

Here's a good conversion chart:

One ounce of unsweetened chocolate = three tablespoons of cocoa. Reduce fat in recipe by one tablespoon.

For each ounce of unsweetened chocolate use 3 Tablespoons of cocoa powder and 1 Tablespoon of butter.
Personally I am not find of whiskey and I would use Amaretto..I will have to search for the recipe.

The best is clear alcohol, or vodka as a base of it.
You may add a bit of gelatin to give it the body of a Diva chocolate liqueur.
