You can use raw sugar or coconut sugar, for the dairy a bit of pure coconut milk or soya milk, and vegan margarine, you have to get the sugars and liquids up to the right temperature, and add the nuts and margarine quickly, a bit of corn syrup or agave nectar helps, even brown rice or barley syrup will make them crisp and form the mounds

chocolate is not vegan
read about parts per million for imported chocolate and it is not possible to keep the critters out of the fermentation process. Use carob instead it is not fermented does not need fat and sugar to be sweet in flavor. chocolate is bitter by nature before the fat and sugar.
