Thermochromic ink changes colour when it is heated or cooled and is almost flat.
Scratch and sniff is an ink containing aromatic chemicals that can be released by friction, it is slightly raised.
Holographic ink is a reflective ink created by a powder heated to create a reflection of a stamped area, it is raised.
Embossing is not an ink (but there are thermographic inks which create a raised surface when heated) it is created by pushing a relief blank either into the face of the paper or the reverse (debossing) also known as blind embossing, this is sometimes used with a foil block which leaves a metallic ink on the raised surface.
