Why would my car stall randomly when I'm driving?

I have a 94 Bonneville with 125K miles on it. If I drive it for more than 45 minutes at a time, the oil gauge starts to jump all over the place and eventually it drops completely and the car stalls. I just had an oil change one week ago. So what could be causing this?

    Sounds kind of like there might be too much oil going into the engine make the fuel not combust properly.

    I'm not an expert but that could have an effect. hope you can get it fixed though, good luck.
