How to fix pre-boiled crayfish?

I love anything that sits, swims or crawls in water and always heard crayfish were good eating. I bought some pre-boiled crayfish today and was wondering what to do with them. Do I make some kind of sauce for them? How do I re-heat them without over-cooking them? (I already searched how to twist and snap the tail from the body.) I have no idea if they were cooked with spices, lemon, etc. or just boiled in plain water.

Aw, gee... all these possibilities sound scrumptious! I might try each one. Picking Best Answer is going to be hard.

All the answers were very good but, since I had all the ingredients already, I went with the Etouffee.

    The crawfish you bought are probably frozen and ready to be thawed out and used in something like "Crawfish Etouffee." My favorite recipe for them. But I like "Boiled crawfish" too. You can Google "recipes for crawfish," and get a good idea of how you may want to cook them.

    Most likely, you will want to add additional seasonings with a light touch.

    The tails (hard tips) have been removed.

    When they are thawed out, put them in a sauce pan and add a cup of chicken broth and bring to a boil, Lower to a simmer and after 3 minutes, take off the heat. They are good to eat now. Or use in a recipe.

    You can warm them up or just eat them cold. Mix some melted butter and lemon juice and dip them in that, mmm, bon appetit.

    I love crawfish on top of a deviled egg or in a seafood pasta. YUM!!!
