Why is it that theit are so many questions that generalize/assign behavior on the broad term Christians? Isn't that prejudice?

Yes it is prejudice... Just as to generalize or assign behavior to the term gay, or black or women is prejudicial!

If the mash pH is too low you can add calcium hydroxide (slaked lime) to bring it back to it's optimal level of 5.2.
If you have a lot of dark malts you can add chalk to the mash to increase the pH as well, since the dark malts tend to bring it down further than lighter malts.
