How to cook a Possum?

    clean it and skin it

    nail it to a barn board plank

    build a nice campfire

    put the plank,possum side down

    cook for about 6 hours replenishing fire as needed

    remove possum and divide up the plank into servings

    I've been told that it's best to catch it alive and feed it sweet potatoes for at least a week to get rid of the gamey taste.

    Possums are scavengers so they eat anything they find.

    After killing it you can use any recipe for wild game.

    Skin it first, hang it by it's legs and do the standard cuts to remove the skin. After that you can take the backsteaks from it, these start around the mid back and stretches down to just above the anus and before the first leg joint. This meat can be fried in a skillet with oil or butter. Other stringy meats can be cooked into a standard meat stew

    Because of the high fat content in the meat we used to debone the meat and grind it up into burgers. Most of the fat would fry out of them. I've also had them baked with tators and carrots and onions like a roast.

    They can be very gamey tasting if you don't do as suggested by others and feed them for a week or two.

    Get it fresh. You wanna make you that you de-bone it and take the organs out after skinning it of course. Don't over do the seasoning! All you need is salt and pepper. Place it in the oven at 350 degrees for 20 minutes. Serve with fresh veggies and rice.
