The 14th of February is the feast of St Valentine. Originally it was a quiet day where potential lovers would make tentative contact to see how things were. These days it is a load of commercial nonsense that has obliterated the original meaning of the day. The best thing to do is ignore it.

Lent begins 47 days before Easter, so it includes February 14 only if Easter is in March or on April 1 of a non-leap year.

The date of Easter is a ridiculous archaic calculation, the upshot of which is that it can fall anywhere from March 22 to April 25.

So "usually" is an exaggeration, but Valentine's Day does fall during Lent every few years.

I "cope" by not being Christian. But I don't see the problem? You can venerate courtly love without eating meat, or whatever your specific traditions are.

It's only considered meat if you chew!
