Horse Stall?
Hi, we live a few hundred yards away from a riding stable.No issue there, plenty of space between. The rub comes in because they want to convert an outbuilding that s about 75 ft away from my front door into a horse stall. What might I expect in the way of smells and flies from it? This is not a thing against horses, they are pretty cool actually. I m worried about the proximity to my home.

If they are decent horsepeople, it's not likely to be a problem.
Good horsepeople keep their stalls clean, and don't put manure piles right next to the stable buildings - for their horses' well being.
Depending on the climate and season, you may see more bug-eating birds, like barn swallows. They're beautiful.

Ah...Well...You are asking equestrians who actually like the smell of the barn and manure (I know we are weird) but you'd get used to it after a while if any smell did come to your house.
The sent wouldn't be strong unless the manure pit is closer to your house
