What's more accurate Buck Wheat or Buckwheat?

I'm revising a story, of mine. One paragraph has someone cook Buck Wheat Waffles. It sort of sounds like someone named Buck is being cooked.

Update:

Once again, Yahoo Answers miscateogirzed my question. It should've been under grammar and spelling, not entertainment. Any way, this is an important question. I'm already past my deadline.
