I want to make some chocolate syrup to put over icecream.?

    For a chocolate syrup, you'd probably be best off carefully melting your chocolate and then slowly mixing in an inverted sugar syrup. How much sugar syrup you would need to add would depend on the cocoa volume of the chocolate.

    For ganache just melt some chocolate over a double boiler and slowly add in some heavy cream.

    You just need equal quantities (by volume)

    of melted chocolate, sugar and water

    with a splash of vanilla extract added .. if you want to.

    Put some chocolate in a microwavable measuring jug and melt it in the microwave .. this way you can see what the melted volume is.

    Put the same amount of sugar(by volume) and water in a small saucepan and heat until the sugar has melted.

    Add the syrup to the melted chocolate slowly .. stirring all the time.

    Voila ! .. Chocolate SYRUP
