Because according to the theory of evolution an individual stays the same during its lifetime.

All mutations that happen in an individual do not affect that individual (apart from those mutations that cause cancer and thereby remove that individual from the gene pool). Any mutation that happen in your body, happens in exactly one cell of your body, and it does not matter at all if one of a few million cells in you hand is somehow different from all the other hand cells.

Only mutations that happen in sperm or egg cells or sperm or egg producing cells have an effect on evolution. If a mutation occurs in an egg cell, and that egg gets fertilized and grows up to be a new individual, then that mutation occurs in each and every cell of that individual, and it can be inherited by all its descendants.
