Fighting a red light ticket?
I was in a downtown area, with lots of jay walkers and busy traffic, the speed limit is only 25mph, I was being as cautious as possible since I don't drive here often. I was pulled over by a cop car and I pulled into a near by parking lot, and the cop was saying that he didn't see me run the light but a bicycle cop did and he was coming. I told him the light was yellow but he said it wasn't blah blah and gave me a ticket. I requested a hearing to differ the ticket, How can I fight this in court?

Same as you defend any other accusation. You read all of the relevant law and become skilled in cross examination.

If you plea not guilty, a trial will be scheduled. You will say it was yellow and the bike cop will say it was red. Unfortunately, due to his training and experience, his testimony will be give more credibility. If they offer you a deferment, that may be your best option.

Both cops would have to show up in court. They could, but the odds of sending two cops would be pretty low. They only show about half the time when it's one.
If the guy on the bicycle show up you ask how he knows the guy he saw was you. If the guy writing the ticket shows he didn't see you run it. If they are both there you are going to ask how they are sure they got the right guy.
This is also why I have a dash cam. I could show when the light changed.

It will be your word against a impartial police officer, unless you have some corroborating evidence like dash cam video you will lose . Anyone can fight a ticket in court, most are not successful.
