I like it, Colby is unique and hardly ever used and Jack is a timeless classic. I think Colby Jack flows quite well together

The cheese stands alone, the cheese stands alone. Hi Ho the Dairy O !, your child will be picked on for it and wish to be left alone.

For anyone with the last name Cheddar or Monterrey. Monterrey Jack. Colby Cheddar. Cheese names in general. Possibly even Stilton. Although Stilton kind of goes with Cheesewright.

Colby is more modern than my usual taste but I think it’s cute. Goes well with a classic like Jack.
