What to do with leftover roast chicken?
I have roast chicken and roast potatoes left over. Rather than just eating it the same way again is there anything I can do that's a bit different that will use them both?

I have made chicken cakes much the same way you make fish cakes that is with bread crumbs and an egg and some seasoning and form them into round cakes about 3 inches thick and cooking with olive oil. You can make a potato salad from the potatoes.

soup..... chicken sandwich and refried potatoes..... chicken salad using the potatoes
chop the potatoes and mince the chicken and use as a stuffing with other ingredients in a perogi/ triangle type hand pie..... ... chicken pot pie filling..... filling for tacos....

If it was a whole roast chicken you made, strip off all the meat and set aside, then simmer the bones to make chicken stock. Then you have some great choices:
1. Chill or freeze the stock and chicken meat for future use
2.Recipes could be chicken rissotto, curry ( Thai style coconut curry is lush), chicken soup ( add some veg, maybe noodles or rice)- either way you use the stock and the meat.
3. I love chicken sandwiches with mayo, with sliced re-fried roast potatoes on the side!

Stick em in a pot of water and chicken broth and frozen mixed veggies and make delicious soup.

Remove skin and bones from chicken, wash the potatoes and put both in a food processor. Lightly whiz them to smaller, but not tiny chunks (aim for a quarter inch size). Make a dressing of mayonnaise, coarse mustard, pickle relish and onion. Serve as a lunch entre.

Diced up together with some chopped herbs would be good in a 'Spanish' omelette / tortilla / frittata.

Shred the meat mix with some enchilada sauce roll up a tablespoon or two of meat mixture in corn tortilla place in sided-oven safe dish, cover with remaining enchilada sauce and shredded cheddar -bake 20-30 minutes at 350.

Make a curry. Chop up an onion and an apple and fry them gently, along with whatever spices you like, add in some apricot jam and/or chutney, and some chicken stock or water, let it all simmer for a while, then add the sliced leftover chicken and potato just to heat them through, and there you are. Cook some rice and a green veg to go with it.

Dice them up and make a hash out of them. Surprisingly delicious.
