Any links or information on how they do the ritual when jews mix two things that has been used for dairy and meat?

I need information, either a link or you just tell me, on how the ritual the jews are done when, for example, a plate that has been used for meat and another plate that has been used for dairy, is mixed.

Its not quite as simple as that.  There are a lot of variables involved just a few:

    1) What are the plates made of?

    2) What types of food were on them?

    3) Was the food hor or cold?

It could range from nothing needing to be ing done to it being impossible to rectify.  Generally the best solution is that if you don't know the correct answer: ask your local Orthodox Rabbi

I have looked into the Jewish dietary laws...They go way back...

The early Hebrew peoples had independent customs and dietary rules that set them apart. They were not farmers or fishermen, they were tradesmen.

Their tribal dietary rules would not allow them break bread with a Greek or Roman 3,000 years ago.  Assimilation has always difficult for Jewish folks but they amassed fortunes being Tradesmen and  Merchants...
