Why would a plant care about its fruit oxidizing?

Supposedly, fruits have protective covering for a variety of reasons, one of them to prevent the flesh from oxidizing. Why would a fruit care if it turns brown or not? Does the flesh lose nutrition during oxidation? If I make apple juice and it turns brown, is it less healthy?
