Potatoes are flammable??

So there aren’t any pumpkins available where I am rn, so I figured, hollow out a potato would work, right? It’s like a turnip, which were the original ones, I think. But turns out they’re flammable??? Funny enough, it was the grumpy lantern that set fire! (lol)

But really. Why did this happen?

Thanx!

Potatoes have a high starch content, much more than the turnips that we used to use as kids (they didn't have pumpkins in England unless you grew your own). As they dry out by a candle they become more flammable. Carbohydrates - sugars and starches - will generally ignite in the right conditions; ironically baking a potato is rarely seen as a risk, but they will catch if done too long in a microwave. Other things that people rarely think of as flammable include Holly trees and oranges.
