Why do therapists ask questions in third person?
I’m Jeffrey. They will directly ask me “Does Jeffrey like jokes?” “Jeffrey probably wants this painting out of his room” They say it like there talking about me but to me. Does anyone know this process?

Jeffrey might not like talking about himself so when he answers, he is saying "Jeffrey " not "I......"
Many find it hard to talk about themselves, so, speaking in the 3rd person helps
I have never heard of a therapist who uses this though

You're the patient and you have every right to ask them why they use that phrasing.
I've never known of any therapist who talks like that.
