The last sense to leave a dying person is their hearing. 

I've heard it was hearing hun.

As Susan said, it's the sense of hearing.

We dont know. There havent been a lot of people coming back from the dead to tell us they could still hear or smell everything right up till the end

I guess it depends on how you die but I think for most people your hearing is the last to go. There have been people who have almost died and they said they couldn't see but they could hear people around them trying to save them. They said the voices sounded far away as if they were drifting away. The good thing is most of them said they felt "at peace" .
