When would you sell a portion of your shares vs when to sell all of your shares?
I’m quite curious when you would sell a portion vs the entire thing. For example I bought into Nio when it was over $50 with an incredible profit, however I was told to hold the long term and to only sell when you see a difference in the company along with other factors. Although I do want to take the advantage of the dips and profit when the stock crumbles 10% or so, so in regards to the question at what point would you sell part vs the entire thing?

Many reasons, but the biggest one is to diversify. If you started with $1000 investment and that's now worth $10,000, then you have a lot more riding on one stock*. If you're still big on the company, then sell part of it and invest the profits in a different stock or fund.
* Made up numbers. $10k is a lot for some people but not a lot for other investors. That comfort level is obviously an individual thing.
