and the person walk into the parking lot with knife person saw it percieved it as threat called police then after the police got there a few hours later the neighbors have assault rifles how is this self defense

It is not illegal to have assault rifles, if they are not threatening anyone and just have it at home as a precautionary/safety measure. It has nothing to do with self defense.

If someone comes at you with a knife, kill them. You don't have to see their resume, you don't have to check if the knife is sharp, or even real. It's a weapon, kill them.
