Can shell voicings have 5th notes?

My teacher is introducing me to jazz with Autumn Leaves. He uses chords with 5ths in them to play the song.

Example: Barred B7 with the root on the A string played from E to e as X 2 4 2 4 2.

I thought shell voicings were just 1 3 7.

He says all chords are played as shell voicings

Am7 as 5 X 5 5 5 X

D7 as X 5 7 5 7 5

Gmaj7 as 3 X 4 4 3 X

Cmaj7 as X 3 5 4 5 X

F#m7b5 as 2 X 2 2 1 X

B7 as X 2 4 2 4 2

Em as X 7 9 9 8 7
