What would happen?

I’ve got an 08 G35 with bad catalytic converters. How exactly would this effect the motor?

Your CEL will be on soon.  A car with a clogged converter will have no power.

Some of those converters plug up and blow debris back into the motor. I've already seen the cylinder walls and piston rings ruined by that. If you just have a P0420 or P0430 code the converters are just not performing to the minimum they need to work at and then it doesn't effect the motor at all.

If they are clogged up, it won't run very well.  If they are coming apart inside, there will be rattles (been there) and the exhaust note will be affected.  The CEL will be illuminated and it will not pass inspection.
