Depends on the guy and his situation. He could be all over the show because he is making sense of his feelings and is finding it difficult, so is behaving strangely. He could be going through a lot in his life. I think it's ok to just be upfront and ask him. Whatever it is that you feel is not quite right or seems a bit strange, just put it in a nice way and ask. Could be that he is going through a lot and doesn't want to worry you or tell you in case you are put off.
