    Obviously yes. Not only purchase habits but everything, including speaking normally. Try repeating (with hey google listening on your phone) a topic that you are completely unconnected to a 100 times during the day. Then see how the search results / google ads change!!

    It's not really spying; you're giving Google your information because you're using their services, and they're keeping track of it and using that data, which is all in the fine print of the EULA that nobody reads.
