Are the days you’re in university ie (attending class Monday Tuesday Wednesday) the same each year of study or do they change each year?

They change from year to year, in fact from semester to semester or quarter to quarter.  And yes, that's an issue when you're holding down a job while in university, though employers near campuses tend to be used to it.

Your schedule changes according to the courses you sign up for.

It's not school, U.K. Unis alter dates to suit their Lecturers. So don't bank on it being the same.

It changes depending on the courses you register for. You may be able to choose classes that don't meet on Mondays or Tuesdays. How did you register for the classes you're taking now? 

Year!  They can change each term, and if you have tutorials as well as lectures they can get shuffled around for logistical reasons.  Most employers know that if they hire students then they have to be flexible to some extent.  If you have very small classes then sometimes can can negotiate a lecture or two, but don't depend on this.  

Take the job and if you reach an impasse you can hand in your notice at that point.  You'll get a lot less hurt in life if you realise that nobody is irreplaceable in a job and most of the time getting, losing, or leaving a job isn't personal.  If you do get this job, it's not even in the bag yet! and you do a good job your employer is more likely to be flexible later, or to rehire you later if you need to leave due to study commitments.  Don't fret about things that haven't happened.
