It’s three. Caramel is NOT supposed to be pronounced “CAR-MEL”.

    Three syllables in New England.

In North America the common pronunciation is:

    KAR-muhl (two syllables).

But for the rest of the English speaking world it is a three syllable word, most common:

    KARR-uh-mel, KARR-uh-muhl

With the word being derived from French or Spanish (both of which have a heavy Latin influence), I am sure those of us who speak English of any form are pronouncing the word correctly.

Three.  An almost instinctive way to count the syllables in a word is say the word out loud while simultaneously clapping your hands on each syllable:  Car (clap) a (clap) mel (clap).

It has three although it can incorrectly be understood with only one i.e. "carmel".
