  • can you replace butter for yogurt in a steamed pudding?

I'm always trying to reduce the fat and calorie content of my desserts so that they are healthier for me and my family and often replace half of the butter called for in a cake for fat free yogurt. However, I was unsure if this would work in a steamed pudding? Like spotted dick, golden syrup sponge or jam sponge? I would think it would work but I was wondering if anybody else had tried it or had an opinion?

  • could I use rum flavouring in a tiramisu?

I wanted to make a tiramisu with a twist as I love the flavour of rum! But I'm not old enough to buy rum so could I use rum flavouring? If so how much would I need to use? Looking at a recipe that I'm going to use it says that you would need 2 tbsps of brandy, so would I need 2 tbsps of rum flavouring? Or less because the flavouring is strong?

  • can I use low fat butter when making pastry?

Would it work if I used low fat butter for pastry making? I wasnt sure whether it would or not but I'm into healthier baking and I know pastry has an awful lot of fat in it.

I'm not too concerned about whether it will effect the taste of the pastry or not because the pie filling will overpower it anyway I'm just wondering if it will hold together and form a pastry like dough? Or will it just crumble?

I am following a recipe that uses low fat butter btw, but I want to know if its likely to work as not all recipes from the internet can be trusted. Has anybody else tried it and its been sucessful?

  • UK alternative to light cool whip?

I've been doing a lot of low calorie/fat baking recently and most american pie recipes call for light cool whip, however I cannot find this in the UK. Is there an alternative I can use? Could I use light whipping cream, such as elmlea? I'm looking for something with rougly the same calorie and fat content as cool whip.

    Thankyou :)

  • Can I use sour milk instead of yoghurt in muffins, if so how much?

I'm making some muffins but I don't have any yoghurt so could I add a teaspoon of lemon juice to some milk and allow it to thicken and use that instead? Also yoghurt obviously weighs more than milk so if the recipe calls for 8 ounces of yoghurt how much sour milk would I need to use instead?

Speedy answers please, hoping to make this this afternoon for a treat :)

  • lower calorie cheesecake base alternatives?

I'm from the UK so i cannot get hold of graham cracker crumbs which is what most low calorie cheesecake recipes recommend. Is there a near UK alternative? Digestive biscuits are much higher in calories than graham cracker crumbs.

I've heard of trying almond meal or crushed almonds as a base? Does this work? And I've also heard you can try to combine your base with water instead of butter but does it hold enough?

Thanks in advance, I'm really struggling to find one it seems all the calories lie in the base I can easily reduce the calorie content of the topping.

  • any tips for making chocolate souffles? And can I make them in advance?

I love baking and I'm starting to get a little more adventurous now, so I'm steering away from the usual muffins and cupcakes which I think I've mastered. I have never made souffles before however I am going to attempt to make some little individual ones in ramekins today for dessert after a family meal.

Does anybody have and tips for me so they don't go wrong? I have heard about keeping your mixing bowl and whisk cold, keeping eggs at room temperature (as goes for any baked goods) and to not overfold the chocolate and the egg whites.Anything else?

And, one more thing, would they be ok to make before-hand and kept in the fridge and then baked later? Because the family meal is at someone elses house so I would have to take them to their house to be cooked and if I cook them beforehand they will be deflated.

Thankyou so much in advance! x :)

  • does butter seep through baking paper?

I'm watching my calorie intake and although I may sound like the thickest person ever asking this question I don't want to be adding extra calories to my baked goods with the butter I use to stick my baking paper to my tins without realising it. So the butter goes on the base of my tin then I put baking paper on top so it sticks - then in goes my cake mixture. Does the butter seep through the baking paper when its in the oven? Or am I ok to do this without having to worry?

  • My apple crumble turned out dry?

    I followed this recipe:

    http://recipes.sparkpeople.com/recipe-detail.asp?r...

I know this is for apple crisp, not apple crumble but they are the same thing apart from apple crisp uses oats in the topping - which was delicious. The problem was with the apples, normal apple crumble has a sort of apple sauce in with the apples and I assumed the apples would cook and release their juices and make this sauce themselves, however they didnt and the apples were dry. What can I do to make the sauce that you normally get with the chunks of apple? Could I stew half of the apples and then mash them and then put them in with the larger chunks? Or should I just stir in some apple sauce from a jar?

    Thanks in advance :)

  • How long should it be before an anorexic gains weight?

I've just started my new diet plan to recover from anorexia. How long should it take before I start to see results? I've gone from 800 calories a day to 2000. I am eating three meals a day, snacking in between and drinking fortisips (which are calorie and nutrient dense drinks). I'm hoping to gain around a stone/14 pounds/6.3 kg to start with and then build it up from there. I currently weigh 39kg/6 stone/84 pounds and I'm 5 ft 6. I'm also female. My activity level is pretty low as I've been told to conserve as much of my energy as I can so I'm just doing basic everyday things. Hope that information helps to get me some answers :)

  • Any advice for a recovering anorexic?

I have just started my long road to recovery from anorexia. I'm finding it hard but I know I have to do it for my family and my health. Does anybody have any advice on what I can do to help myself recover? Perhaps somebody can give me advice thats been through it themselves? I've finally accepted It's not healthy for me to be this way and I need to do something about it. My eating disorder nurse has prescribed me with fortisip drinks to take along side my 3 meals a day and snacks. I have been told to aim for around 2000 calories which is a big deal for me since I was only getting around 500-800 before.

Please don't comment if you don't have anything helpful to say. I've not asked this question to be judged or scrutinized, I'm asking for some friendly help and advice :) Thankyou x

  • How many calories do i save on a mcdonalds wrap by holding the sauces?

I'm having to count my calories at the moment and I wondered how many calories were in a McDonalds grilled chicken wrap with just the salad in it. No mayo/salsa/tomato sauce or dressings.

The original nutrition information for the wrap states there are 330 calories in it including the mayonaise and tomato sauce, but since I had neither of those how many calories roughly would I take off that total?

Any ideas would be a great help!
