    I heard that Andrew Zimmern tried a Taiwanese dish called "dama mein" that was made by fermenting pork in a jar for 2 weeks. Can anyone give me a recipe? I'd like to know what cut of pork is used, how much salt is needed, if there is an acidic starter culture or any other ingredient, and what temperature range is best.
