Eveytime I make a Red Velvet cake, I get this strange texture in the middle of the cake. It looks darker in that spot and feels kind of heavy. I've tried on several occasions, following the directions closely, and making sure not to overmix. I've even tried different recipes, but still the same result. I usually don't have this problem with other cakes. I bake from scratch all the time. I have however had this problem with a cake using cocoa powder before, so I'm thinking the cocoa powder may be a factor. What am I doing wrong? Please help, preferably if you have successfuly made this cake before. Thanks
