When I quote someone in writing but only want a little bit from on paragraph, and a little bit more in another, do I have to use ... or can I just put a period and keep going. And if I do use...do I have to capitalize it because it is the start of a new sentence from what I am quoting. I just skipped a few lines.

"Blah kdjfalk lkfji fulfil life, do your best dkrie be kind, gobble blah bleek grore from the house. Cheese in the fridge, I love ham. [One paragraph] [next paragraph but supporting my point in first paragraph] ...Z? or...z, OR .Z or .z?
