I want to make turkey burgers and sweet potato fries for my family, but my digestive system can't handle grease. Any ideas on what I can do?

My mom has been going to the gym for a few weeks now and she has a lot of weight to lose. However, she is limited on the machines she can workout on because of a heel spur in her right foot and severe arthritis in her left shoulder. She does the stationary bike, usually for 2 to 3 miles, and she's tried different arm machines, but most of them bother her arthritis too much. Obviously I don't know the pain she's in or experiencing while exercising so I don't want to tell her to push through it and have her doubled over in pain and not able to move or sleep. Also, her foot doctor that's been looking after her heel spur told her not to do the treadmill. The only way she can get rid of the heel spur is if she gets surgery and the surgery is too risky with her weight. Anyone have any ideas as to what machines we could try out?
