What to use for beef flavoring for warm cherry tomato salad?
I had this simple salad at a restaurant the other day and have been unable to recreate it (so not so simple I guess). It had cherry tomatoes, shallots and a really nice beef flavor, but there wasn't any noticeable sauce.
I have tried roasting the tomatoes in the oven for about 10 minutes until soft, sauteing the shallots and then tossing with beef broth, but the flavor is not there. I'm afraid if I thicken the broth it will be more like tomatoes and shallots in a gravy.
Does anyone have any ideas on how I might increase the beef flavor in this salad?
