    I was wanting to make anko (Japanese red bean paste) for dessert pastries, and I'm wondering if its possible to make it using red kidney beans (the kind typically used in chili) instead of azuki beans, which are somewhat expensive. While I'm at it, are there any decent domestic (for the US) substitutes that would work for azuki beans?
