  • chef school patisserie exam - tips on cooking choc eclairs?

    tomorrow i have my final patisserie exam, and one of the items we have to make is chocolate ecalirs.

    does anyone have any tips on how to cook/make perfect choc eclairs?

    the recipie has been given to us already, and we have made them allready in class, but im worried about the cooking process. i know that if you steam them then the result is better, any tips on how to do this? also you have to start of with a high temperature, then reduce the temparature part way through, but how do you tell when to do this?

    if anyone has any profesional patisserie experience i would welcome your advice!

    incase you need to know the recipie is:

    choux paste:

    200g water

    80g butter

    135g bakers flour

    5 eggs

    pinch salt

    pinch sugar

  • changing 4 stroke engine oil, have i killed my bike??

    i bought a 4 stroke moped a few months ago and the oil light just came on.

    in the past i have only owned 2 stroke bikes where you just pour the oil in and away you go.....

    never having owned a 4 stroke before i just stoped into a gas station, bought some 4 stroke oil and poured it into the oil intake next to the motor, but the intake was on an akward angle so i just flipped the bike on its side for easy acsess. upon flipping my bike back up oil poured out everywhere!!!

    the ride home was very slow, my bike wasnt happy.

    after having read a few websites on how to change 4 stroke oil i found out you have to drain the old oil away first..... oops my bad!

    have i just killed my bike? what should i do? i am dreading starting it up in the morning.

    any tips on how to drain all the old oil out?
