  • Wife's Options for Finishing College?

My wife went to college for 3.5 years, and ended up failing out pretty much due to apathy her last two semesters.

Now that she's seen how tough it is to get a decent job anywhere without a degree she's realized the errors of her ways and wants to get a degree of some kind (even assoc. if available) but we don't know what our options are.

We've since moved away from her college so going back to it to finish the degree is pretty much out of the question. What other options do we have if she wants a degree of some kind?

  • Knife Technique - Difference between brunoise and dice?

I've always wondered this. A brunoise is defined as "an exacting fine chop" and is executed in the exact same fashion that a dice is (cut into panels, cut into julienne, then cut across), so what's the difference?

  • Can someone give me this regular expression?

I need a regular expression (using Perl) to parse a decimal out of a line of text. It'll pretty much have the form:

    stuff xx.xx more stuff

The stuff could be international characters, so it should not expect alphanumeric when skipping to the decimal.

  • How do you make "authentic" Mexican food?

Of course I use the term "authentic" cautiously here. I'm speaking of the Mexican restaurants in America (you know, the ones that are always "El Something"), which I'm hopelessly addicted to.

What's the secret to their cooking? When I make burritos at home they don't even come close. By comparison everything I make is very... Dry? For lack of a better term. The ground beef is in large chunks and not as moist, there are no good sauces integrated into the dish, the tortilla is dry. Pretty much everything I cook ends up tasting like a taco kit without the taco kit.

I would love to be able to cook Mexican food as you get it in the restaurants. Moist meat, lots of sauce, lots of intermingling of the ingredients and flavors. How do you do it? Do I need to boil the meat? Drench everything in special sauces? I'm all ears here.
