I am looking for a method to cook a leg of lamb to medium and serve hot. Problem is that we are going to a game before people come to our house and eat. I would like to serve the leg of lamb medium and warm, but will be gone for 4 hours before we have to eat.

I was thinking caterers must be used to reheating the leg of lamb. What do they do? Can I precook the leg of lamp to rare and reheat it when we get back? How do I make sure that the meat is safe to eat and that it is medium and juicy - not being around for 4 hours?
